First the cake part (the pastry part) is not sponge cake. It's made from dough with yeast. Like bread just sweeter and has lard/butter/oil in it. I'm sure there is a term specifically for this.
The filling traditionally is ground walnut or poppy seeds - with some kind of jam used to hold it together. There are more "exotic" fillings, but they are all from the past 30 years.
The dough is filled with the filling, and baked together in the oven. While in case of swiss roll, the sponge cake is baked, then rolled up with the filling when it's cool.
So different "materials" and different process.
